Curry paste:
five large green chilies
one bunch spring onions (washed and trimmed)
one bunch mint leaves

two tsp ground coriander
1 tsp ground cumin
1 tsp ground turmeric
two tsp shrimp paste or powder

Put all spice elements in a foods processor and grind into a fine paste. Gently simmer the coconut milk in a non-stick pan till decreased to half. Add curry paste and stir-fry in the decreased milk for about 20 minutes until the paste is thick and also the oil separates out. Add chicken pieces and eggplants/orca, cook uncovered till chicken is cooked through. Season with fish sauce and curry leaves. Garnish with chopped green chilies and coriander prior to serving.
Pepper Chicken with Fermented Beans
Serves 6
9 ½ meat, two vegetable, one ½ fat, ½ starch, ¼ sugar
Protein 97g
Fat 60g
Carbohydrate 43g

Elements:
800g chicken pieces
one tsp salt
one Tbsp oil
2 Tbsp chopped garlic
one Tbsp chopped ginger
1 tsp chopped aged orange peel
two Tbsp (30g) black fermented soya beans/miso
3 green peppers (reduce into bite measurements)
two red peppers (reduce into bite sizes)
Seasoning:
one tsp Chinese rice wine
1 tsp salt
1 tsp sugar
one ½ Tbsp dark soya sauce
two tsp corn flour
3 Tbsp water
Chop chicken into bite-size pieces| and rub with salt, set aside to drain. Heat one tbsp of oil in a non-stick wok until smoke happens. Include chopped garlic and ginger and stir-fry till fragrant. After that, include chicken pieces and fry till they begin to turn brown. Get rid of the chicken items, leaving some with the oil behind. Stir fermented beans and orange peel to the remaining oil. Stir fry for 1 more moment. Lastly include in peppers and saute briefly until they are cooked and still crisp. Return the chicken towards the wok, sprinkle rice wine and pour in seasoning mixture. Cover and cook for 30 seconds over high heat. Serve immediately.

How to make a Delicious and Easy Vegan Tofu Pasta Salad
Making a delicious vegan tofu pasta salad is so simple. Start with any pasta. I prefer whole wheat in a curly cue shape, but you can make this dish with pretty much any pasta noodles you like.
1. Boil the pasta following the instruction on the package. Be sure to use enough water and stir the pasta occasionally as it boils.
2. When the pasta has boiled for long enough, strain out the water with a colander in the sink.
3. Now put the strained pasta in a big bowl, toss in extra virgin olive oil, salt, and pepper. You can add more to the dressing, such as red wine or balsamic vinegar.
4. Refrigerate the pasta. When it is cool toss in some of the great ingredients listed below for a nutritious dish.
Baked tofu. Cut the tofu into small cubes. Baked tofu comes in a wide varitey of brands and flavors. I don’t think I have ever tried one that I didn’t like. My current favorite is the Teriyaki baked tofu form the San Diego Soy Dairy. Tofu is excellent for adding protein to this salad.
Tomatoes. This really only works with cherry tomatoes, as regular tomatoes fall apart when you cut them up and mix them in.
Broccoli. Little florets add a lot of vitamins and flavor to the salad. A bit tough to pick out, and some don’t like this, so keep on the side if you might serve this to those who don’t appreciate broccoli.
Parsley. Dice up a little and add it to the salad, parsley gives everything a fresh green flavor.
Olives. When possible I prefer pitted Kalamata olives, but all olives are good. I’ll even use diced black olives from a can if I don’t have anything in a jar or fresh from an “olive bar”.
Pickles. Cut into little pieces. I used to be a huge fan of the pickles sold chilled in jars, but lately I’ve been slumming it with jars of “pickle chips” (not sold chilled) like you would put on a veggie burger. Either would work just fine. You could even add both types of pickles.
Frozen peas. Is it just me, or do the frozen peas totally make a noodle salad? Sure, you could eat it without the peas, but why?
Chickpeas or garbanzo beans. Adds a nice texture along with a good dose of protein.
Three bean salad. Just delicious when added to this dish. I probably wouldn’t do this and also the chickpeas, as three bean salad usually has chickpeas in it.
Chow mein noodles. This adds such a wonderful crunch. These must be served on the side, because if you mix them right into the salad the chow mein noodles will get soggy and loose all their crunch.
Jalapeno or pepperoncini peppers. Just to state the obvious, only add these spicy little guys if you want things hot. These are something else you might want to keep on the side.
More noodles. Sounds weird, but try adding even more pasta with a different shape and flavor. For example, if you are using a bag of whole wheat curly cue shaped pasta for the base, why not try a half bag of rice wagon wheels to add a contrasting noodle.
…and anything else you like. Almost any fresh or cooked vegetable or fruit (celery, peppers, artichoke hearts, mushrooms, blueberries, sun dried tomatoes, etc) could be added to this salad!
So there you have it, easy as pie! This is a nice dish to make for a potluck, picnic, or to have for lunch all week long if you make a big batch on a Sunday evening.

How to easily Purchase and Prepare Delicious Vegan Veggie Burgers
Even though I am vegan I must admit that I still love burgers. I certainly do not mean burgers made with ground animal flesh, I mean veggie burgers. I love the burger, I love the toppings, I love the bun, and I love the side dishes. And I love that it can all easily be vegan.
First comes the burger itself. You can, of course, make your own burgers. While I greatly admire those who do this, it is simply beyond my current culinary skill or enthusiasm. I purchase frozen veggie burgers from my local grocer. Most grocery will stores carry some form of veggie burger, however a grocery store with more of a healthy food emphasis will likely have a greater variety. If you are vegan do be certain to find a variety of veggie burger which is vegan. A surprising number of veggie burgers contain such things as eggs and cheese. Generally, if I don’t see the work “vegan” prominently displayed on the package I won’t purchase it.
I tend to loosely categorize veggie burgers as denser or lighter. I consider vegan Boca Burgers to be a bit denser, and perhaps closer in consistency to a traditional meat burger patty. I consider most varieties of Gardenburgers and Sunshine Burgers to be of a lighter consistency. Lately I have been enjoying Amy’s All American burger, which I feel is somewhere in the middle. Heating a veggie burger with a microwave is fairly easy. It is probably best to consult the instructions printed on the box the burger patty comes in as to microwaving instructions for the specific product that you are preparing. I like to use a microwaveable plate to heat the patty on. Often I won’t place the patty directly on the plate, but will place two wooden chopsticks under the patty. I do this because I have had plates break as a patty went from frozen to hot rather quickly. If the patty is frozen I’ll heat for a full minute on one side, flip it over and heat for an additional 15 seconds or so. If the patty is not frozen I’ll heat for slightly less time.
While the burger is heating I will simultaneously be toasting a bun. I like a sprouted whole wheat bun, but you can use virtually any type of bread, or none at all, to make a great burger. I like the bread and all toppings to be vegan. I won’t stress this for every ingredient I list, but I personally like it all to be completely vegan.
You can certainly use the traditional condiments, and put ketchup, mustard, relish and / or pickles on your burger. There is a reason this is so popular. This comes as close as I would want in taste to the meat burgers I ate years ago.
Mayo is another condiment many people enjoy on a burger, and there are some great vegan mayonaises out there including Vegenaise and Nayonaise. I’ve never liked mayo on burgers, but I do love it on Tofurky sandwiches. Go figure.
I don’t often have vegan cheese on hand, but if I do I will add that. This is the one ingredient that you might want to heat along with the burger patty. I’d put it on after I flipped the patty for the last 15 seconds or so of heating, and would not start out with it on the frozen patty.
As some veggie burgers can be a little dry I will often add a topping with some oil such as olive tapenade, sun dried tomatoes in olive oil, or (if I have it) avocado slices. This will really add a lot of body and flavor to the burger.
A tomato slice is a fantastic addition to any burger. A nice red tomato slice looks fantastic and tastes great.
I always like to add a lettuce leaf or two. This adds a great crunch, and I always have some lettuce in the fridge.
A few slices of an onion can add a lot of zest to a burger. The classic onion for this would be a red bermuda, but I think any onion be it vadalia, white, or yellow, would be just fine.
Sautéed mushrooms are great on burgers. However, I’ve never put them on a veggie burger. It’s too much work! My guess is that most people who are up to sautéeing mushrooms aren’t eating frozen burger patties. Still, very tasty.
For some reason I like to have a little something on the side when I eat a burger. I don’t know why, the burger is usually enough to eat, but I really enjoy a small side dish.
If you cut into a tomato for that tomato slice, why not dice up the rest of the tomato for a side dish. You can even shred up a bit of lettuce and voila!, you have a side salad.
Potato chips. I love potato chips. For me a little can go a long way, and I can stretch a smallish bag for one week of lunches.
And, finally, don’t forget the pickles. If I have nice deli style spears I’ll put one of those on the side. If I don’t, I’ll go with a few pickle chips, which I always have a jar of in the fridge.

Low Calorie and Vegetarian Recipes – the Delicious Options
It is common belief that low calorie and vegetarian recipes have to challenge your palate. The truth is, however, they can be just as delicious as your favorite dishes. Now, I am about to share with you two such recipes, and you can just give them a try to convince yourself.
1. Vegetarian Black Bean Burgers
You will need the following ingredients to prepare for this recipe:
* 1 can of black beans
* 1/2 of an onion
* 1/2 cup of flour
* 2 slices of bread
* 1 teaspoon of garlic powder
* 1 teaspoon of onion powder
* 1/2 teaspoon seasoned salt
* salt and pepper
To prepare, follow the steps below:
a) Dice the onion, then saute it for about 4 or 5 minutes until soft.
b) Pour the black beans into a large bowl and mash them until they are almost smooth.
c) Add to the mashed black beans with the sauteed onions, garlic powder, onion powder, and seasoned salt.
d) Crumble up the sliced bread and add them to the mixture.
e) Add the flour to the mixture, a few tablespoons each time. Keep stirring after each addition.
f) Add a small amount of oil into a frying pan, and heat it up.
g) Scoop some of the mixture out of the bowl with your hands, and shape it into a pattie that is about 1/2 thick.
h) Fry the patties until they are firm.
Have a try and you will be amazed at the wonderful taste of the burgers.
2. Tofu Scramble
If you have ever tried vegetarian diet, you will know that tofu is always used as a meat substitute. And, the tofu scramble which we are about to try can be served as a wonderful substitute for scrambled eggs.
You need these ingredients:
* 1 block of tofu, drained and press
* 1/2 yellow onion
* 1/2 green pepper
* 1 teaspoon garlic powder
* 1 teaspoon onion powder
* 1/2 teaspoon dried parsley
* 1 tablespoon soy sauce
* 2 tablespoons nutritional yeast
* 2 teaspoons oil or margarine
Here are the steps for cooking:
a) Cut the tofu into one inch cubes, and then use a fork to slightly crumble it.
b) Dice your onion and bell pepper.
c) Add some oil or margarine to a skillet set to medium-high.
d) Add the onion, green pepper and tofu to the skillet. Cook for 4 or 5 minutes.
e) Add to the skillet with garlic powder, onion powder, parsley, soy sauce, and nutritional yeast.
f) Cook the tofu scramble for 6 or 7 minutes, stirring frequently. When it is done, pour onto a plate and enjoy.
You can treat a tofu scramble like what you would do with scramble eggs, adding vegetables of your choice, like tomatoes, mushrooms, spinach, and carrots.
