?My? Vanilla Frosting Recipe

I wish I could actually call this “my” vanilla frosting recipe, but when you’ve got something that works so well, why reinvent the proverbial wheel???  Pillsbury’s The Complete Book of Baking is one of the best general cookbooks around for pies and cookies and cakes, and its recipe for Buttercream Frosting is a thing of beauty!

The great thing about this recipe is its simplicity:

2/3 cup softened butter
4 cups powdered sugar
1 teaspoon vanilla extract
2-4 tablespoons half-and-half or milk

In a large bowl, beat butter until light and fluffy.  Gradually add powdered sugar, beating well.  Beat in vanilla and half-and-half, adding enough half-and-half for desired spreading consistency.  Yield: Frosts 2-layer or 13×9-inch cake.

Now, I do admit that I tinker a bit with this vanilla frosting recipe.  I use double-strength vanilla extract, to add extra depth and richness to the flavor, and I use 2 teaspoons of it.  It’s no more expensive than pure vanilla extract (no one should even acknowledge the existence of the artificial stuff); and although you won’t readily find it at your local grocery store, it’s easily bought online.  When you have a recipe as simple and straightforward as this one is, the quality of the ingredients is paramount.  So don’t buy your butter on sale but invest in a European-style, go with the half-and-half rather than milk, and use the double-strength vanilla extract.  You’ll thank me later!

Once you’ve made your vanilla frosting recipe, you can use it to frost a sheet cake or a layer cake; you can add a bit more confectioners’ sugar to make an icing to decorate your cake or cookies; you can frost 24 cupcakes; and you can just pick up a spoon and eat it “as is” … my favorite!  People will wrestle with each other for the privilege of licking the bowl and the spoon.

This recipe is readily adaptable for vegans, for people with lactose intolerance, and for those who keep Kosher and need non-dairy desserts to accompany a meat meal.  Use margarine (though the flavor won’t be the same as it is with butter, some accommodations are necessary in this life), and substitute vanilla soy milk for the half-and-half.  Voila!  Treats that everyone can enjoy!

Another beautiful thing about this recipe is that you can tint the frosting for any occasion — red for Valentine’s Day, green for St. Paddy’s Day, yellow for Easter, pink and blue for a baby shower.  And you can even leave it in its original creamy color for a wedding.  This vanilla frosting recipe is too good to be true!

Luscious Chocolate Cake Recipe

Resistance is futile! It is indeed hard to resist the sweet smell of chocolate cake, especially when the aroma is linked with nice memories.

My mom is a very open person, and always willing to share. Not only is she generous with her advice, but she will share with you all the things that she experienced. she is always willing to explain sewing, cooking, or advanced mathematics. There is one thing, however, that she guards jealously. It is her biggest secret, and she had promises that she will carry to the grave. And that is her chocolate cake recipe. So far, we tried everything to to get it from her.

This is not just a normal chocolate mix cake recipe. This is seriously gourmet. It is not a simple chocolate cake recipe, either. Chocolate cake is normally very easy to make, but hers demands all day and all night. She is literally in there for 12 hours at a time, slaving away on the perfect chocolate cake. But it is wonderful. It is priceless. It is the most delicious cake that I have ever ate. I could do anything to get that chocolate cake recipe.

The thing is, my mother isn’t all that into chocolate in general. She never makes chocolate brownies. When she goes to a restaurant she won’t even order a chocolate brownie. But that chocolate cake recipe is her favourite thing in the world. Every holiday she cooks it, and each time we ask for more. Nobody ever gets sick of it. Even my friends, strict vegetarians who will only eat vegan chocolate cake recipes usually, will make an exception for her delectable chocolate cake. It really is that good.

The truly sad part is that, since I first tasted that chocolate cake, I will not eat any other sort of chocolate desert. Even the finest German chocolate cake recipe leaves me unsatisfied. Part of it is that my dear mother made it. She spends so much time on it, and clearly wants us to like it so much, that it is hard to resist. I don’t know if I would like it quite as much if it were someone else who made it, but even so I would like it still. After all, she has won several cookingcontests with her chocolate cake recipe. She has only participated a handful of times, but every time she has entered the same recipe, and every time she has won. It was no use to try to sneak in the kitchen. Until I left the room, she just refused to go on with her cooking. I hope some day she will share the recipe with us.

Raw Vegan Ice Cream Easy Recipe


Diana Rein shows you how to make raw vegan ice cream in 10 minutes. You don’t need an ice cream maker but it would be best for you to have a high speed blender. Recipe: 1 cup raw cashews (soaked for 5-6 hours in water, then drained) Meat from 1 young thai coconut 1 cup of coconut milk 1 cup raw agave nectar 1/4 cup virgin coconut oil (got mine from Whole Foods) 1 tblsp vanilla extract 2 heaping tblspns of raw cacao powder (optional, you can also add any other flavor in the form of fruit like strawberries, bananas, blueberries, etc.) Place all ingredients EXCEPT FOR CASHEWS in high speed blender.
