Vegetarian Recipes: Artichoke Soup

1 lb. each of artichokes and potatoes,
1 Spanish onion,
1 oz. of butter,
1 pint of milk,
and pepper and salt to taste.

Peel, wash, and cut into dice the artichokes, potatoes, and onion. Cook them until tender in 1 quart of water with the butter and seasoning. When the vegetables are tender rub them through a sieve. Return the liquid to the saucepan, add the milk, and boil the soup up again. Add water if the soup is too thick. Serve with Allinson plain rusks, or small dice of bread fried crisp in butter or vege-butter.

Vegetarian Recipes: Why Vegans Don’t Consume Dairy Products

As with most dietary questions, vegans are split on the issue of dairy products – not so much on the question of whether or not they are acceptable, but instead for what reasons they should not be consumed.

All vegans (or at least true vegans) abstain from consuming dairy products. Some do so for nutritional reasons; others abstain for ethical reasons.

Those who do it for nutritional reasons cite a range of health problems related to the consumption of dairy products, including high cholesterol. Many also have a problem digesting lactose or have a blood-iron or diabetic problem related to milk protein, casein. In addition to this, milk and cheese often contain small portions of undesirable hormones that are added to dairy cow feeds to increase production.

Those who abstain from consuming dairy products for ethical reasons also have a range of reasons for doing so.

Some cite the poor treatment of dairy cows as a main reason for not consuming milk and cheese. They note that dairy cows are forced to become pregnant once each year to maintain a constantly high yield of milk. They are also fed numerous steroids to increase production.

Others who abstain for ethical reasons often cite the maltreatment of dairy cow offspring. They note that calves are not allowed to spend time with or suckle from the mother, but instead are prematurely removed to be reared for either veal production, beef production, or as replacement dairy cows.

The calves selected for “veal” production are often forced to live in crates so tiny that they cannot turn around. They must face in one direction; they cannot groom themselves; and they are fed hormone-laden feed until they are sent off to be slaughtered.

If you are a prospective vegan, you may want to take some time now to think about what is best for you. Ask yourself whether you wanted to become a vegan for ethical reasons, dietary reasons, or both. And from there, determine whether or not these arguments were strong enough to compel you to do so. Either way, you should emerge with a stronger viewpoint and a better understanding of what you do and do not want.

Vegetarian Recipes: Bowels and Stomach Digestion

Many of the health benefits derived from a vegetarian diet have to do with creating a healthy environment in the bowels and stomach. Our digestive systems, from prehistory on, were designed to metabolize vegetable matter, more than animal products. Fruits, vegetables, legumes and nuts provide the kind of dietary fiber our digestive systems need to function properly. The Western diet that’s high in processed and refined flour and sugar, and in animal products that are laden with hormones and antibiotics, are actually anathema to our insides.

When the digestive system doesn’t function and work as it’s intended to, that leads to opportunistic diseases or changes in the DNA of cells in the stomach and colon. And there are more practical considerations as well. When we don’t get enough of the fiber we need, we incur a host of digestion and elimination problems, such as constipation and hemorrhoids that are a result of straining. These diseases and syndromes are much less evident in a vegetarian population than in a meat-eating population.

Other diseases of the bowel that occur less frequently in a vegetarian population include irritable bowel syndrome, and chronic ulcerative colitis, mostly likely due to the increased fiber content in a vegetarian diet. And of course a diet that’s higher in dietary fiber that comes from a vegetarian diet will decrease the likelihood or risk of colon cancer.

When you consider the risks that come with a diet that includes meat and animal products, and the benefits that come from a vegetarian diet, does the prospect of a steak or burger or bacon really sound that good to you? Doesn’t it at least make sense to reverse the portion sizes and proportions of meats to vegetables and side dishes? In other words, if you must continue to eat meat, then make meat your side dish, or just incidental to your meal, such as in a stir fry. Increasing the proportion of fruits and vegetables in your diet can only be good for you.

Cooking Recipes Are A Guide, Not The Law

When you are cooking a recipe for the first time it is always a wise thing to follow it to the letter so you are sure that the outcome is close to what the original chef intended it to be. But after cooking it a few times and when you are getting comfortable with it you can change a few things around if you feel like it. Don’t think that you are doing something wrong by not sticking to the recipe, there are always certain things in a recipe that is not exactly to you taste so your are allowed to change them a bit. Maybe a little less of this and a bit more of that, just so it is more up to your own taste.

Being flexible is sometimes necessary

It could also be that you just can not afford to get some of the ingredients because they are very expensive. Maybe the stores are closed and you forgot to get a certain part of the recipe. And while these things sometimes happen you start to improvise with the recipes you make and before you know it you are freewheeling it.

There are a few things you should keep in mind when you change a recipe, only change ingredients that are not crucial to the dish. Those items you can leave out of your variation or you could put something else in it’s place you could even ad an ingredient in top of the others. The thing to remember is not to get rid of an important item, as an example, if you are making meatloaf you can not leave out the minced (or ground) meat can you? You can ad new spices to enrich the meatloaf recipe or make it more to your own taste.

Talking of changing a recipe, I’m a vegetarian.

Another good reason for changing a recipe if of course when your specific diet calls for it. Maybe you are, or someone who is coming to dinner is, a vegetarian then you could be thinking of starting to learn completely new recipes. You could also start with using the existing ones you know and substitute certain items with non animal ones.

In recipes with sauces that are tomato based or things like stir-fries you could use tempeh or extra firm tofu. If the dinner is with people who are vegan then you could use some soft tofu when you need something to substitute cream cheeses. If the recipe calls for milk then there are soy milk or rice milk that you can use. And when you need to replace meat in chili or soup recipes you can use a wide variety of beans.

So you see there are many reasons to divert from the original recipe, and you shouldn’t worry to much about it. Sometime you just need to go with what your instinct tells you to do. There is no cooking police that will throw you in jail when you give a meal some personal touch, the worst thing that can happen is that your family tells you to never do that again.
